Ole youse gringos!!
Combine the canola oil, lime juice, red wine vinegar (if using beef), chopped onion, sugar, oregano, cumin, salt and pepper in a shallow casserole dish. Score both sides of steak. Add the steak or chicken, cover and marinate in refridgerator for several hours.
Remove from marinade and bar-b-que. Slice in thin strips across the grain.
Wrap in warm tortillas with onions and peppers and any or all of the other toppings.
I don't like meaty wraps, so I only use two chicken breast halves with the same marinade amounts to make 8 wraps or I use half the chicken slices for 4 wraps and the other half for Chicken Taco Salad.
