A make ahead breakfast casserole that has a rich pairing of ham, mushrooms, cheese, and eggs. The dish is light on eggs, so people picky about eggs love this dish. Substitute with cream of mushroom, or cream of onion soups.
Spread out creasant rolls across the bottom of a 9x13 pan. Seal any breaks in dough. Spread ham and sliced mushroom in a pizza topping style. Scatter Monterey cheese across dish. In a mixing bowl beat eggs and then mix in soup breaking up any clumps. Pour egg mixture over dish evenly, allowing it to seep down through the "topping". Can store over night covered in aluminum foil. Bake dish at 350 for 1 hour. Remove foil for last 15 minutes.
Can replace ham with bacon, or sausage.
