Easy cheesy breakfast meal!
Step 1. Heat the olive oil over a medium flame in a frypan. When the oil is hot, add the potato cubes and cover the pan. Cook for 10 minutes.
Step 2. Remove the cover. Add the chipotle chili powder and stir the potatoes. Cook until they are browned and soft inside. Remove from the heat and set aside.
Step 3. Add the sausage to the pan, breaking it apart into bits. Brown the sausage and cook thoroughly. Drain off any fat in the pan.
Step 4. While the sausage is cooking, crack the eggs into a bowl. Add milk and beat with a fork until blended.
Step 5. In a separate fry pan, add 1/2 tablespoon oil and heat over a medium flame. Add the eggs, stirring while they cook. Once the eggs reach the desired consistency, remove from the heat.
Step 6. Assemble the tacos by placing meat into each tortilla, then the potatoes, and then the eggs. Top each taco with cheese, cilantro, salsa, and green onions. Enjoy!
