Delicious corn, black bean and tomato salsa that's perfect on salty tortilla chips. Not too spicy and nicely cold for a hot summer afternoon.
Drain liquid from corn and sliced jalapenos. Mix corn, black beans (including liquid) and sliced jalapenos in large bowl. Dice tomatoes and add to bowl (4 tomatoes makes for a more cool / fresh salsa while 3 makes it more hearty). Chop green onions and finely chop the cilantro and add to bowl. Mix.
Add balsamic vinegar, 1 TBSP at a time, tasting to create a good balance. Salt / pepper to taste.
