Light tasting dip. Good with Tortilla Scoops.
Drain beans and corn. Mix all ingredients together in a large bowl. In a sauce pan, mix salt, pepper, olive oil, cider vinegar, water, and sugar. Bring to a boil for one minute. Set aside to cool. Pour over veggie mix and refrigerate.
Serve with Scoops Tortilla Chips.
The longer it sets the better it tastes. Normally, I let it set for 24 hours, and then drain excess liquid before serving.
