An easy, fresh salad to eat on a hot summer day!
Combine lemon juice, olive oil, vinegar, seasoning, dill, minced garlic and whisk.
In a medium bowl add minced onion, chopped bell pepper, 1/2 an English cucumber [chopped] and cilantro.
Pour in dressing and mix thoroughly.
Next, using a spiralizer or tool to curl one english cucumber and 2-3 large carrots into raw spiral noodles. If you don't have this tool, you can just dice up the vegetables.
Whisk together 2 tablespoons of honey with 2 tablespoons of rice vinegar and pour over salad. Gently toss.
Top with extra chopped cilantro and sesame seeds. Peanuts would be a nice addition.
