Season chicken with salt.
In a large skillet place all ingredients coconut milt to garlic. Bring to boil and reduce heat to simmer.
Add chicken breasts simmer 5 minutes. Turn chicken breasts over add mushrooms and scallions, cover and cook until chicken breasts are cooked (165°) approximately 8-10 minutes.
Transfer chicken. to plate cover to keep warm, increase heat and cook sauce until slightly reduced.
Serve over Jasimine Rice.
