Light side salad
Boil large pot of salted water over high heat. Have large bowl of ice water handy. Add carrots & cabbage to boiling water for 3 minutes. Add green beans & cook for an additional 2 min. Drain vegetables and plunge into ice water to stop the cooking action. Drain well and set aside.
Combine juice & brown sugar in small sauce pan over med-hi heat until sugar disolves. Pour mixture into glass jar with a tight lid & add fish sauce, ginger, garlic, & chilie. Shake well.
Combine vegetables and chicken in mixing bowl & toss with dressing. Serve immediately. Sprinkle each serving with peanuts, cilantro & have freshly ground pepper available to be added to taste.
