Prepare the chicken and marinade
-Trim any excess fat off the skinless chicken breasts, tenderize a bit by pounding them a little bit ( can omit this step if want a little more firm chicken) and cut into bit size portions
-Roast coriander and cumin if using the seeds (I put in a pan on the stove and heat gently until they start popping (Can also just use ground coriander and cumin)
-Mix all the ingredients ( coconut milk, turmeric, coriander, cumin, salt and ground ginger in a container that you can marinate the cut up chicken
-Marinate for a minimum of 30 minutes but the longer the better, even over night
-An hour before cooking , soak the wooden skewers in water so they won't burn on the grill
-When ready to cook, place the chicken on the skewers
-Grill on the BBQ until done , approximately 4 -5 minutes on each side on a medium hot grill
Prepare the peanut sauce ( Can be made ahead and kept in refrigerator but bring to room temperature before serving)
- Put all of the ingredients in a food processor except ground peanuts for garnish ( coconut milk, peanut butter, red curry paste, apple cider vinegar, soy sauce, lime juice and brown sugar if using (My suggestion is to do it without the sugar , taste it after blended smooth and add the brown sugar if you want it sweeter) Also if you use crunchy peanut butter I would not ground it until all the chunks are ground smooth, but make sure the sauce is mixed
-As an option for presentation you can sprinkle the chopped or ground unsalted, roasted peanuts on top of the dipping sauce and can also a little chopped cilantro
-if any health concerns you could do 3 different small bowls for the peanut sauce for couples to share
