Thai Coconut Curry
Saute shallot, garlic, and curry paste. Add stock, coconut milk. Reduce to 2 cups. Cook meat in sauce, remove. Stir in cilantro, scallion, and lime juice. Season to taste. Serve meat over spinach over basmati rice. Add sauce.
