Pour the coconut milk into a wide pan. Add the curry paste and bring to a simmer.
Cut the chicken fillets into bite sixed pieces and add to the coconut milk. Poach for 10 mins, turning occasionally.
Add the sliced courgette and simmer for another 5 mins.
Add the small broccoli florets and mangetout and simmer for a further 5 mins before serving with cooked basmati rice.
