Spicy and delicious with a fried egg sunny-side up over the top! You can use regular basil, but try to find Thai basil - It has a more assertive taste than many other sweet basils. The herb has small leaves, purple stems and a subtle licorice or mint flavor that really makes this dish great.
Mince garlic and chili pepper together. Wash basil and remove leaves from stem. In a wok, fry garlic and chili pepper in oil over high heat until garlic starts to turn brown (careful not to burn). Drop the ground chicken in, stirring constantly. The juice will start to come out, stir until all the juice is gone completely. Add sugar and fish sauce. Add basil. Turn over a few times to mix the leaves and them remove from the fire.
Serve over hot rice.
