Cook onions, garlic then add other vegetables. Cook for 4-5 minutes.
Add can of coconut milk and box of peanut sauce mix. Let simmer for 3-4 minutes or until thickened.
Add cooked pasta and mix well. Sprinkle with peanuts if desired and serve.
