In a sauce pan heat 1 T vegetable oil
Add chicken and cook till brown
Add onions, garlic and ginger and cook till brown
Add coconut milk and curry paste
Simmer till chicken is done
Add lime juice, fish sauce, salt and pepper
Serve over rice.
