Sauté curry paste until fragrant, appx 1 minutes, add garlic, sauté additional minute, deglaze with coconut milk, add rest of ingredients except lime juice. Bring to boil and simmer for 30-45 minutes. Remove from heat and stir in lime juice. Season to taste.
