1. Heat oil in a wok or large frying pan over medium high heat. Add the pork, garlic, and salt. Cook, stirring and tossing, until the pork is no longer pink.
2. Add the chilis, lime juice, fish sauce, and soy sauce and stir fry for 5 minutes longer.
3. Just before serving, stir in cilantro. Serve with rice or noodles.
