Not sure where this recipe came from, probably from a macaroni box way back during that first Thanksgiving back in 2001. It started with regular, non-gluten free macaroni, but has since been adapted to suite our new diet.
Cook macaroni according to the package instructions.
Cook bacon to a crisp. Drain on napkins. Chop once cooled and set aside. Chop green onions and set aside.
While cooking, melt butter in 3qt sauce pan over low heat. Stir in flour, salt, pepper, and other seasonings. Cover over low heat, stirring constantly, until smooth and bubbly; remove from heat. Stir in milk.
Heat to boiling, stirring constantly. Boil and stir 1 minute; remove form heat. Stir in cheese until melted.
Drain macaroni. Gently stir into cheese sauce. Fold in half of the bacon and green onions. Pour into uncreased 2 qt casserole dish. Top with cheese and remaining bacon and green onions.
Bake uncovered 20-25 minutes until bubbly and top is golden brown.
