Great sweet and savory Sweet Potato dish. Much healthier than candied yams!
1. Cook unpeeled sweet potatoes in boiling water for 20 minutes. Let cool.
2. Combine all other ingredients.
3. Mash sweet potatoes and add in mixture.
Depending on the flavor of the sweet potatoes 1/2 cup brown sugar may be used instead of 1/3 cup.
You can finish this off with almonds, cranberries or other. (i.e. Salad Pizazz -- Orange Cranberry Almondine)
This is a good make ahead and reheat recipe.
