-Thaw in the refrigerator for 3 days if 8-9 lbs. If not completely thawed on the day of cooking, place in stock pot covered with cold water (leave it in the packaging). Change the water every 30 minutes for up to 4 hours.
-Move oven rack to the bottom and preheat to 325
-Remove thawed turkey from package and cover with vegetable oil, salt, and pepper.
-Place into cooking bag and make 6 small slits for steam.
-Cook 3 hours and 20 minutes at 325 degrees (raise to 350 near the end to cook sides)
-Remove and cover with foil for 20 minutes to rest.
Gravy
-Melted butter in pot on medium low.
-Whisk in flour and pepper. Cook for 2 minutes, stirring.
-Add broth.
-Cook uncovered for 4-5 minutes or until thickened.
-Stir in cream.
