It doesn' look appetizing; as a matter of fact, it is downright ugly; but once you taste this sweet but ugly thing you will be amazed at how good ugly can be.
1. Preheat oven to 300 degrees. Melt chocolate and butter in double boiler Stir together half of the sugar and four egg yolks; add this to the melted chocolate concoction.
2. Using an electric mixer, beat the egg whites; slowly add the remaining 1/2 cup of sugar until stiff peaks form. Fold mixture into the chocolate. Pour into a greased 9-inch cake pan.
3. Bake for 40 minutes or until a toothpick inserted in the center of the cake comes out with just a few crumbs on it. Cool for 30 minutes before removing from the pan. Dust with powdered sugar and serve.
Be sure to use high quality chocolate with 45% - 50% cocoa.
