Preheat oven to 350 degrees
Prepare a foil wrapped rack in a broiler pan or a cookie sheet. cut slits in foil to aid in draining grease from loaf.
Place sliced mushrooms into a food processor and mince, keeping some pieces larger to define ingredient.
In a large bowl, combine the meatloaf ingredients, adding meat last. Mix well (mixture will be moist.) Cook in a 350 degree preheated oven for 50 minutes or until a meat thermometer reads 150 degrees F.
In a small bowl, whisk the ketchup (or gochujang), brown sugar, mustard and Worcestershire sauce. Spoon over the meat loaf. Cook 15 minutes longer or until heated through. Let stand for 10-15 minutes before cutting. Resting time is important to assure slicing cleanly.
