In a medium sized bowl, scramble eggs with water until light and fluffy
Heat 2 Tbsp. Butter in a medium sauce pan.
When the butter is hot and foamy, toss in the apple pieces and saute them till they are slightly tender.
Add the brown sugar now and stir it around till it melts and creates a sauce with the butter.
Season with the cinnamon and stir for about a minute. You can now ass the optional Cream Cheese and the Optional Raisins. Set the sauce aside, it''s time to make the Omelette
In a well seasoned 10" cast iron frying pan or a good non stick pan, melt the remaining 2 Tbsp. of butter and the dash of coconut oil (to prevent the butter from burning).
When foamy, add the beaten eggs and let it firm up a bit. When the eggs looks slightly solidified, move it around in the butter so it does not stick to the pan. It should be, well .... swimming in the butter :)
Once the egg looks cooked enough, scoop the Apple mixture onto the Omelette.
Fold the Omelette in half and carefully plate it.
