Mix shortening, butter, brown sugar, egg yolk and vanilla thoroughly.
Sift together flour and salt; gradually add to shortening mixture.
Stir nuts into cookie dough.
Use 3/4 full cookie scoop to portion out the dough and roll into balls slightly with hands.
Use the end of a wooden spoon handle to press a spot for the filling.
Bake 350 degrees 9-10 minutes.
Allow to cool completely.
Combine all ingredients and fill the cookies.
Allow to air dry for several hours before placing in cookie containers.
