In a large soup pot, sauté the carrots, celery, onions, garlic, and cabbage over medium heat. Stir frequently to prevent burning.oo
Add the spices. Cover and sauté just until the spices are aromatic, only a few minutes.
Add the pumpkin puree, coconut milk, and water. Bring to a boil, then cover and reduce to a simmer. Simmer for 15 minutes.
Add the white beans and simmer 10 more minutes.
Add the peas during the last minute of cooking. Taste to adjust seasoning and enjoy!

DIY Curry Powder
Madras curry powder is named for the Madras region in Southern India, a region known for its spicy stews. It’s a blend that may contain the following: coriander seeds, turmeric, chilies, cumin seeds, fennel seeds, black pepper, garlic, ginger, fenugreek, cinnamon, cloves, anise, and mustard. If you’re sensitive to heat, you can make your own milder version of curry powder by mixing equal parts ground turmeric, paprika, and cumin, with a dash of cinnamon.
Low-Fat Substitute
If you want to reduce the amount of fat in this dish, swap out the coconut milk for another non-dairy milk like almond, organic soy, or oat.
Cooked Beans
If you prefer to cook your own beans, use 1¾ cups cooked beans for every 1 (15-ounce) can of beans.
Freezer-Friendly
This dish is very freezer-friendly. Make extras to enjoy later. You can serve over brown rice, roasted potatoes, or steamed spinach.
