My version of a Hot Pot or Shabu Shabu for seafood- made it in the Florida Keys, thus the name, but anywhere with good seafood will do! Fun dinner for a group to sit around and "cook". Really need to have a hot pot or burner to keep the broth simmering through the meal as diners dip their food in to cook. Small fondue "forks" are better than chopsticks for this as it keeps the food from disappearing in the broth. We really like the induction cooktop for this. Use seafood you like and can get fresh where you live.
Seed and cut the tomatoes into quarters. Blend with some of the chicken broth until liquefied. Place in a 3 or 4 inch deep, wide pot and add the clam juice and chicken broth saving about 1 cup to add later as the level drops during dinner. Add the ginger, cilantro, juice of 1/2 lime and the rind, pepper to taste, Jalapeno pepper slit along the sides, and about 2 tablespoons of the Ponzu (with Lime if you can find it). Let it simmer as you cut up the vegetables and seafood, about 20 minutes. Taste and adjust the taste with more lime juice, Ponzu, salt and pepper as needed.
Make the sauces by combining the ingredients to taste and consistency.
Cut up the seafood (if using lobster, par boil first) into bite sized pieces and peel the shrimp leaving on the tails. Arrange on plates so each diner can reach it as needed.
About 10 minutes before serving, add the mushrooms, bok choy, squash and green onions to the pot to cook and soften before dinner.
2 small fondue forks per person are best and a plate to put the cooked meat and sauces on before eating are a good idea. This way you can load up the fork and get it back in the broth sooner!
As the dinner progresses, add more chicken broth as the level drops. The broth becomes even more flavorful. At the end, add the noodles to the pot to heat and serve the noodles and broth, This may be the best part!
