Suggest a better descriptionStir coffee, espresso and 5 tablespoons of rum in a baking dish until espresso dissolves and set aside.
In bowl of a mixer fitted with whisk attachment, beat yolks at low speed until combined then add sugar and salt and beat at medium speed until pale yellow 2 minutes. Mix in remaining 4 tablespoons rum. Add mascarpone and beat until no lumps remain. Transfer to a large mixing bowl and set aside. Beat cream at medium speed 1 minute, then increase speed to high and beat until stiff peaks form about another 2 min. Fold 1/3 of whipped cream into mascarpone mixture and then fold in remaining cream.
Drop cookies one at a time in coffee mixture roll and remove (about 3 seconds per cookie...soaking is not necessary)
Arrange cookies in a 13 x 9 pan ,breaking or trimming cookies as needed to fit.
Spread half of the mascarpone/whipped cream mixture evenly over cookies. Sift 2 tablespoons of cocoa over the top. Add next layer of cookies and cheese/cream mixture and sift remaining 1 1/2 tablespoons cocoa. (for a total of 2 layers) Sprinkle with grated chocolate and refrigerate 6 to 24 hours
