beat the egg yolk and caster sugar for 5 mins until thick and pale and forms a ribbon.
Add mascarpone and keep whisking
mix in alcohol and set aside
whisk egg white until thick and fold into mixture
Place cold coffee in shallow bowl, dip biscuits in and turn, (outer wet only not centres) 1 second, each side (amaretti needs 10 secs)
pour half mixture in and add another layer and mascarpone
cover and fridge....before serving add cocoa powder and caster sugar, sieved
