Preheat oven to 180celcius or gas mark 4 butter and line 2 8 inch sandwich tins
Thinly slice apples and toss in brown sugar lay them on base of tins.
Cream together butter and caster sugar until light and fluffy.
Beat the eggs into the mixture
Sift flour and add to mixture and fold in
Divide mixture between tins
Bake in oven for 25 to 30 mins
Lightly whip cream,icing sugar and essence
Sandwich together with the cream
Mix the remaining icing sugar and cinnamon and sprinkle over top.
You can use muscavado sugar instead of soft brown sugar.
