1. In large skillet, heat the olive oil over medium heat. Add the onion and garlic and saute for 5 to 7 minutes until soft and translucent.
2. While the onion cooks, prep the tofu. With your fingers, crumble the tofu into a large bowl. Add the tamari, turmeric and lemon juice and toss, mashing lightly with a fork.
3. Add the tofu mixture to the pan and cook, stirring frequently for 5 minutes, until the pieces of the tofu have browned slightly and most of the moisture has cooked out. Add the spinach and stir until wilted, the remove from the heat and serve.
