PEEL THE TIGER PRAWN AND PUT THE SHELLS INTO THE STOCK WITH THE LEMON GRASS, GALANGAL, KAFFIR LIME LEAVES AND BRING TO BOIL AND SIMMER FOR 10 MINUTES. STRAIN AND RETURN TO SAUCEPAN.
ADD THE CHILLI PASTE, LIME JUICE AND FISH SAUCE, SIMMER FOR 10 MIN.
ADD THE PRAWNS, MUSHROOMS AND SIMMER FOR 2-3 MIN UNTIL THE PRAWNS ARE DONE.
TASTE - IT SHOULD BE SPICY, SOUR AND A LITTLE SALTY.
LADLE INTO BOWLS AND GARNISH WITH CORIANDER LEAVES.
