This yummy pizza is easy and a lot of fun to make. It is delicious warm or cold, making it a great choice for a tasty, portable packed lunch.
1. Preheat the oven to 400 degrees. Place the pizza crust on a baking sheet and brush with 1 tablespoon of the oil.
2. Spread over the tomato sauce, leaving a small gap around the edge. Put the mozzarella and tomato on top.
3. Roughly tear the basil leaves and sprinkle over the pizza with the grated parmesan cheese. Drizzle over the remaining olive oil and season with plenty of black pepper.
4. Bake in the oven for 15 minutes, until crisp and golden.
5. Remove the pizza from the oven. Let cool slightly, then cut into wedges. Eat warm or let stand to cool completely, then wrap in plastic wrap or put in a plastic container to transport.
