1. Smoke feta using cherry wood. (on stove top or on grill. Smoke for 20 minutes on very low heat so cheese doesn't melt but smoke still continues. Have to get wood smoking, then turn off heat, then add feta, then cover for 20 mins.)
2. Mix all ingredients except smoked feta and basil in big bowl.
3. Season to taste - remember feta will be salty.
4. Sprinkle salad with basil and smoked feta.
