A simple and tasty recipe for when you have ripe tomatoes
Fry the onion and garlic until soft. Add the chopped tomatoes, season with pepper, and fry for about 15 minutes. Stir frequently.
While the sauce is frying, boil water. When the water is boiling add salt and the pasta. Cook until al dente.
Chop the bocconcini in Halfs or quarters, and dress with oil, salt and pepper. Chop the basil leaves.
When the tomato sauce is ready (the tomatoes must be very soft and be more like sauce), remove from the heat, and add the bocconcini and the basil to the sauce.
When you serve the spaghetti, add the sauce to the spaguetti. There is no need to add Parmesan since the bocconcini give al the cheese flavor.
