Suggest a better descriptionCombine the tomatoes, beans, broth, and sugar in a large saucepan. Bring to a boil over high heat, reduce heat, cover, and simmer 5 minutes.
Add the chicken, spinach, and basil, and cook 2 minutes or until spinach is wilted. Remove from heat, and stir in oil.
Puree or leave chunky (I prefer Puree for a creamy tomato soup)
To serve, top each serving with 1 tablespoon mozzarella. (Optional)
