Sautee onion & garlic in saucepan.
Add 1.5 cups water to saucepan, then add carrots and bell pepper. The intention is to heat ingredients and not cook them so it speeds up time in Vitamix.
Add all ingredients to Vitamix EXCEPT SUNDRIED TOMATOES & 1 FRESH TOMATO.
High speed until well blended.
Add sundries tomatoes and pulse, then add diced tomatoes.
Add sundried tomatoes and pulse on High Speed a few times until everything gets sucked into blade, then add diced tomatoes.
