I normally hate curried sausages, but I threw this one together tonight and it was super awesome. I thought I'd post it so I don't forget how I made it :P
1) Heat a small amount to Oil in a frypan and add sliced Sausages and Bacon. Cook until lightly browned.
2) Add sliced Onion and cook until soft.
3) Add can of Indian Style Tomatoes, Curry Powder and Beef Stock and bring to a simmer.
4) Allow to simmer until reduced and slightly thickened.
5) Serve with rice
24th Jan 2015 - Doubled amount of curry powder as per reader suggestion.
Pre-cooked sausages are readily available in New Zealand. If they are not available locally, you can just use normal Beef Sausages and cook them first.
Canned Indian-Style Tomatoes (Watties brand) are readily available on supermarket shelves here in New Zealand. They are simply diced Tomatoes in a can pre-seasoned with Green Peppers, Chilli, Curry, Garlic and Mustard Seeds. If you can't find anything similar in your area, you could just use a can of plain Tomatoes and add a small amount of each of the above to your own personal taste. When I get a chance, I will investigate further to see if I can the quantities right.
Powdered Beef Stock and water is an acceptable alternative to the Beef Stock.
