You’ll make this Cherry Tomato, Garlic, and Basil Baked Salmon in Foil recipe in an assembly line style.
To do this, take out 4 pieces of aluminum foil and lay them out in a row.
Then sprinkle the middle of each piece of foil with olive oil. Top each piece of foil with a salmon fillet.
Then, add some chopped garlic, salt and pepper, lemon juice and basil leaves on top of each salmon fillet.
Lastly, add 5 sliced cherry tomatoes to each piece of foil. I try to have some of the tomatoes on top of the fish and some along the sides.
Then, you fold up each side side of the aluminum foil upwards until the whole salmon is covered in foil.
Bake for 15-20 minutes, open the foil, then broil for 2 minutes.
Note: the amount of time this recipe needs to cook is based on how thick your salmon is. Just start checking on it around the 15 minute mark.
Tip: be careful with the fresh basil burning when you broil it. I like to hide mine behind some tomatoes.
