Made this for Christmas brunch 2012. Can vary the herbs and type of cheese used depending on your taste and what you have on hand.
1. Preheat oven to 450. Whisk together the first 4 ingredients. Stir together the herbs in a small bowl and set aside. Lightly grease a 13x9-inch baking dish.
2. Layer tomatoes, 1 cup cheese, and herb mixture in the dish. Pour egg mixture over top and sprinkle with remaining 1/2 cup cheese.
3. Bake at 450 for 18 to 20 minutes, or until set. Mixture will rise about 1 inch above the rim of the baking dish.
