Suggest a better descriptionCombine tomatoes, onions, & peppers in a large pot. Simmer over medium heat, stirring occasionally, until very soft. Puree through the medium blade of a food mill or push through a coarse-mesh strainer, then return to pot. Stir in brown sugar & mustard.
Tie other spices in a cloth and add to the tomato mixture. Bring the mixture to a rolling boil, then reduce to a simmer. Cook until sauce is reduced by half, stirring often to prevent scorching. Remove & discard the spice bag. Stir in 2 cups cider vinegar, pickling salt, & red pepper. Reduce heat & simmer, stirring almost constantly, for 10 minutes. Pack the hot ketchup into hot jars. Leave 1/8 inch headspace and process 15 minutes.
