Preheat the oven to 375 F degrees.
Heat a cast iron or non-stick pan over medium heat and add the olive oil. Place the onions in the pan and season with a little salt. Let them cook, stirring often, until they've wilted and softened about 10 minutes.
Meanwhile, whisk the eggs with a little salt and pepper and add the grated Parmesan cheese, if using.
When the onions are softened, add the tomatoes. Season with a little salt and pepper and raise the heat to medium-high. Cook the tomatoes for about 5 minutes or until their juices are released and lightly reduced. Too much liquid will keep your frittata from properly setting. Gently tear up the basil and add it to the pan along with the egg mixture. Shake the pan gently to make surethe eggs settle into the veggies. Reduce the heat to low and cook on the stove top until the eggs begin to set around the edges. Transfer the pan to the oven and bake for about 15 minutes or until the frittata is set. Serve the frittata hot or at room temp. You can slice the frittata into wedges in the pan or turn it out onto a cutting board for serving.
Leftover Frittata makes an excellent lunch with a salad or you can slice it to use as a sandwich filling with cheese, veggies and greens.
