Delicious and simple
Chop vegetables. Heat olive oil in a pot over medium high heat. Add onion, bell pepper and celery; cook, stirring, about 5 minutes. Add the garlic, curry, paprika, cayenne, 1teaspoon salt. Cook, stirring, 2 minutes.
Add tomatoes, broth, sugar and 1cup water, then whisk in peanut butter. Bring to a boil, then reduce heat and simmer gently, stirring occasionally, until it thickens, about 30 minutes. Purée with immersion blender.
I have no idea why the nutrition info came out as it did. This should have low calories, etc, but this is how it came out here on Big Oven.
