Suggest a better descriptionRender bacon fat, add butter, carrots, onions and sweat until tender.
Singer with flour, add tomatoes, roast until softening begins.
Add in stock and garlic, cover and simmer for 1 1/2 to 2 hours.
Immersion blend then press through a tamis or chinois.
Add salt, pepper, and sugar.
Cool and store in air tight containers.
I like to replace some of the stock with tomato juice and supplement with more at the end to adjust the thickness.
