Pasta with spinach and tomatoes in a creamy garlic sauce.
Boil water to cook pasta. Salt generously before adding noodles.
Heat oil on low-medium in a large skillet with high sides. Cook garlic and pine nuts, below a sauté, until fragrant.
Turn heat up to medium and add tomatoes, stirring occasionally.
Add spinach slightly before pasta is finished and stir to coat.
Remove pasta from heat with 2-4 minutes remaining, while still firmer than al dente. Drain, saving about 1/2 c. of pasta water.
Add pasta and reserved water to vegetables in skillet and turn heat up to medium high.
Add parmesan cheese and stir as sauce begins to form.
Continue stirring until sauce has thickened and pasta is done.
Add salt and pepper to taste.
Garlic should just barely make a noise while cooking. Reserve more water than you think you will use.
