A crunchy, gooey, gingery South African dessert.
Heat the oven to 350 degrees Fahrenheit (gas mark 4).
Combine the brown sugar, salt, vinegar and the teacup of water in a mid-sized ovenproof dish and put it in the oven for 10 minutes to dissolve the sugar.
Mix the flour, ginger, bicarbonate of soda and jam or marmalade in a bowl.
In a separate bowl, soften the margarine with the hot water.
Add the softened margarine to the flour mixture and blend until smooth.
Drop tablespoons of the mixture evenly into the sugar mixture in the ovenproof dish.
Bake until well risen, for 30-40 minutes.
Serve with cream or custard.
