Crumbled just mildly sweet baby cracker crust, with almond & vanilla sweetened tart cherries served with whipped cream.
Drain liquid from both cans of cherries, gently squeeze cherries and pour off additional liquid. Add 5/8 cup sugar to cherries with 3 tsp Almond Extract; set cherries aside and let soak for 30 minutes stirring once.
Using a potato masher, or similar, crush/powder 1 package of Zweiback rusk crackers (any brand of lightly sweetened baby teething crackers will work) use care to ensure there are plenty of ~1/2" chunks of rusk that do not get completely powdered.
When cherries are ready spread them evenly on the bottom of a round 12" baking dish; mix 5 Tbsp melted butter and 1 tsp vanilla extract with crushed rusk and then spread evenly on top of cherries. Bake at 350 for 20 minutes until rusk is golden and cherries are bubbly. Whip heavy cream with a few tablespoons of sugar (to taste) and serve warm out of the oven. Ice cream makes a great accompaniment.
