In a saucepan, heat 2 Tbsp olive oil. Add onions and cook for 5 minutes.
Add tomato and mushrooms. Cook until soft.
Place mushroom mixture on top of bread.
Top with blue cheese and bake at 400 degrees for 3-4 minutes.
