Batir las claras con el azúcar (merengue frances). Incoporar las yemas de a una. Agregar los ingredientes secos en forma envolvente. Extender la preparación sobre el papel siliconado. Cocinar a 180ºC po 6 minutos. Dejar enfriar, cortar discos de 4 cm y 6 cm de diametro.
Sabayon:
Batir las yemas con el azúcar sobre baño maría hasta alcanzar una temperatura por arriba de los 50ºC. Batir el dulce de leche junto con la crema a 1/2 punto y agregarlo al sabayon tibio en forma intercalada con la gelatina disuelta.
Armado:
Colocar con film 8 aros de 6 cm de diametro. Disponer dentro de los aros mousse hasta la mitad. Un disco de biscuit, la otra parte de mousse y cerra con el otro disco biscuit. Enfriar. Bañar con glacage.
Presentación:
Disponer frutos rojos en el plato. Colocar un disco de chocolate templado. Cortar el postre al medio y disponerlo sobre el disco de chocolate. Decorar con una frutilla bañada en caramelo y salsear el plato. Decorar con menta.
