Heat a large saucepan of MED heat
Add: olive oil until hot
Add: onion, celery, carrots
saute until soft (about 4 min)
Add: garlic, Italian season, crushed red pepper
saute 2 more min
Add: chicken broth and bring to boil
cover, reduce heat to MED-LOW to simmer 20 min
Add: tortellini and cook 5 min (for fresh) - if dried - 15 min
Stir in parsely, taste and adjust as necessary
garnish each bowl with 1 tb cheese
