A vegetarian tomato-based soup.
Saute 1/2 cup chopped onion in 2 tbls olive oil in large saucepan.
Add following to saucepan, bring to boil, and simmer for 20 minutes.
4 cups water w/beef bouillon
Contents (less basil) of 14 oz can italian style diced tomatoes
10 oz frozen cut spinach package
1 lb cheese tortellini
Serve with bread or roll.
The simmering may not be necessary. Just get everything hot!
