Great served with salsa, this omelette is filling and delicious!
1. Whip eggs, milk, and salt and pepper.
2. Warm tortilla in a skillet; set aside.
3. Melt butter in a 10" nonstick skillet coated with cooking spray over high heat. Heat until bubbly.
4. Pour egg mixture into the skillet. Pull eggs toward the center from each side. Remove from heat when eggs no longer run, but are still quite moist; top with cheese, ham, and veggies, spreading over the entire omelet.
5. Slide omelet onto warmed tortilla. To roll, first fold bottom edge of tortilla up 1", then foldsides in 1". Begin rolling, ending seam side down. Let rest for 1 minute, then cut omelet in half.
Serve with salsa, or avocados and tomatoes tossed with lime juice.
